Siam Kempinski Hotel Bangkok’s Mediterranean restaurant, ALATi, is offering ‘La Dolce Vita,’ an exclusive culinary journey through Italy until 31 August 2023. Executive Chef Carlo Valenziano has created a menu that combines traditional and contemporary dishes from the different regions of Italy.

Chef Carlo’s culinary inspiration comes from his travels through the Italian Peninsula, from Sicily and Venice to Verona, Milan, Portofino, and Capri. His dishes aim to evoke gastronomic memories while highlighting the essence of the ‘Sweet Life’.
Start your culinary journey in Sicily with a ‘Carpaccio di gamberi rossi’ or ‘Polpo e patate.’ The cold-cut selection is composed of 20-month Galloni Parma ham, capocollo from Martina Franca, salami from Felino and ‘nduja from Spilinga served with Bella di Cerignola olives and breadsticks. Try the 24-month Vacche Brune Parmesan cheese fritters served with black truffle, honey, and grapes from Parma.
In the pasta section, you will find classic dishes like ‘Carbonara’ from Rome, made with spaghetti from Gragnano, organic egg yolk, cured pork cheek, pecorino, and black pepper. The ‘Risotto all’Amarone’ from Verona, with premium carnaroli rice, Amarone wine, and 30-month Parmesan cheese cream, is sure to please.
For the main course, try the ‘Costoletta alla Milanese’ from Milan, a breaded veal cutlet cooked in clarified butter, lemon, salt flakes, and rocket leaves. The ‘Rombo alla ligure’ from Portofino, an oven-baked turbot roasted with white wine, cherry tomatoes, taggiasca olives, fresh thyme, pine nuts, and potatoes.
Finish off your meal with a selection of desserts, including the ‘Crema Fritta’ from Venice, ‘Sicilian cannoli’ from Sicily, and the famous ‘Tiramisu’ from Veneto.
