Courses of the Moon - Chef Kevin & Oat

Anantara Lawana Koh Samui Resort will host a series of exclusive art-inspired dinners called ‘Courses of the Moon’ on 11 and 12 May 2023. Executive Chef Kevin Fawkes and Thai artist Oat Montien will collaborate to offer guests a unique sensorial experience that celebrates the mystical and natural lushness of Samui through a multi-sensory “moon ritual”.

Celebrating Samui’s Tropical Richness with ‘Courses of the Moon’

Chef Kevin Fawkes drew inspiration from Oat’s poetic charcoal drawings and lines of poetry when creating the four-course degustation menu. The menu and elevated cocktails reference nature and Koh Samui’s tropical richness, based on the artist’s interpretation of the moon’s four phases. The dishes include ashes of roots with Hua Hin sturgeon caviar cream, Suratthani oysters cooked over tree bark and served with broken pomegranate, rye soil and pickled white tapioca, salt-baked blue lobster with white asparagus, butterfly pea and jasmine khao tom, and sea herbs, and a Floating Island dessert with black truffle, chocolate, and waves of jasmine and orange.

Immersive Sensorial Experience in Tree Tops

The ‘Courses of the Moon’ dinner takes place at Tree Tops, a fine dining restaurant perched high above the ground amid the lush canopy of a 120-year-old tree. The experience includes performance art, poetry, site-specific installations, and life drawing sessions by Oat Montien. The climax of the night will be the Floating Island dessert, served just as the artist starts his site-specific ritualistic life drawing performance under the darkening sky.

Chef Kevin Fawkes commented, “The menu aims to heighten bodily and spiritual sensations while showcasing the richness of local ingredients in a spectacular setting that more than does them justice. I hope the experience is as moving and illuminating for the guests who join us as it was for all those involved in the preparation of this art-inspired dinner.”

The ‘Courses of the Moon’ dinner is priced at THB 6,500++ per person and includes special cocktails and a unique drawing from the artist for each guest.
